Canning Small Potatoes couldn't be easier!
I love to have these little suckers in stock just in case and when I visited our local farmer's market I discovered I could can my own!
I bought 9 jars worth of small potatoes ($6) and couldn't wait to get started!
I washed the potatoes and cut out any bad spot I may have found. I then boiled the potatoes for 10 minutes and put them into pint sized jars and covered with boiling water. I then processed them in my pressure canner for 30 min at 10 lbs pressure. (please follow your pressure canners suggestions)
How easy is that?
Potatoes= $6
Lids= $1.09/12
Jars=FREE
Total Cost OOP for 9 pints of Potatoes= less than $7
